Ingredients:

  • 1 head cauliflower (about 3 packed cups ground)
  • 1/2 cup water
  • 1/2 tsp salt
  • 1/2 ounce finely grated Parmigiano-Reggiano (about a 1-1/2 inch square grated)
  • 2 ounces fresh goat cheese
  • cayenne to taste
  • 1 large egg

Directions:

First, prep the cauliflower by cutting out the core and breaking off the cauliflower florets. Throw them into the food processor, and process until they are finely ground. Dump the grounded cauliflower into a saute pan and add a splash of water. Turn the heat on medium-high heat and cook for about 5-6 minutes.
