Cauliflower fried rice is a great and healthy alternative to regular fried rice because it is low carb. This cauliflower fried rice recipe by Kitchen Sanctuary on YouTube shows how easy it is to make your own fried rice at home. It takes simple ingredients to make this, and the flavors replicate the same. Plus, I wouldn’t feel as guilty if I ate a whole bowl of this fried rice because it is light and easy to digest.

Ingredients:

  • 2 tbsp vegetable oil
  • 1 onion peeled and diced
  • 1 clove of garlic – peeled and minced
  • 1 red bell pepper deseeded and finely chopped
  • 2/3 cup frozen peas
  • 1/2 tbsp sesame oil
  • 300 g cauliflower – about 1 large head, grated/riced
  • 2 eggs
  • 2 tbsp dark soy sauce
  • 1/4 tsp salt
  • 1 tsp lemon juice

To Serve:

• 1/2 bunch of spring onions/scallions chopped

Directions:

First, grate the whole cauliflower head. Then, add oil to a wok and the onions. Cook on medium heat until it is translucent. Add in the chopped red pepper, garlic, and peas. Stir regularly. Now, add the grated cauliflower and sesame oil and turn it up to high heat.

Next, stir the cauliflower around to make sure it does not get stuck onto the bottom of the wok. Move it over on one side and crack the eggs on the extra space. Overall, I love cauliflower alternatives because it’s a great way to eat healthy without loads of carbs. I don’t mind eating carbs, but I love fried rice and it does get me to fill so fast. Cauliflower can be filling, but you can eat more to fill you up with fewer calories too.
