Ingredients:

  • 2 lb ground beef
  • 1 medium green bell pepper, diced
  • 2 small yellow onions, diced
  • 2 packets of taco seasoning
  • 1 1/4 cups of water, divided
  • 2 cups of Bisquick
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 oz shredded cheddar cheese, divided
  • 4 oz canned diced green chilies
  • 1/4 tsp ground black pepper
  • 14 oz canned diced tomatoes, drained
  • 14 oz canned whole kernel corn, drained

Directions:

Step 1

Preheat your oven to 350 degrees F and grease a 9 x 13 casserole dish with non-stick cooking spray. Set aside. In a pan over medium-high heat, start breaking down the ground beef. Once browned, drain the excess fat and add the diced yellow onion and green bell pepper. Season with 2 packets of taco seasoning, then pour 1/2 cup of water. Mix until well combined, then simmer for ten minutes. In the meantime, start assembling the casserole.

Step 2

Add 2 cups of Bisquick in a large mixing bowl along with 3/4 cup of water. Mix using a fork, then add it to the bottom of the casserole dish. Spread it nicely and evenly, then place it in the preheated oven for five minutes. While waiting, prep the next layer. Combine 1/2 cup sour cream, 1/2 cup mayonnaise, 4 oz canned diced green chilies, 4 oz shredded cheddar cheese, and 1/4 tsp ground black pepper in a mixing jug, then mix until well combined.

Step 3

Now, start assembling the casserole. Add the ground beef mixture over the baked bisquick, followed by 14 oz canned diced tomatoes, and 14 oz canned whole kernel corn, then dollop the sour cream mixture over and spread it. Sprinkle the remaining shredded cheese, then place it in the preheated 350 degrees F oven and bake for 30 minutes. After baking, let it sit for 7 to 10 minutes. Garnish with some chopped parsley.
