Filling:
In a large bowl, add 1 stick of softened butter and 1 cup of brown sugar. Beat until creamy.
Add one egg and a few drops of vanilla extract. Whisk until just combined.
In a different bowl, add the flour, cinnamon, baking powder, and baking soda. Mix until well combined.
Add the dry mixture to the wet mixture. Mix until well combined.
Add the grated carrots, oats, and raisins. Mix until well incorporated.
Scoop the mixture using an ice cream scoop and place on a baking sheet lined with parchment paper or baking mat. Bake at 350F for about 15 minutes.
Once done baking, allow the cookies to cool.
Add the ingredients for the filling in a bowl and mix until smooth and creamy.
Get one cookie, spread the filling, then top with another cookie to make a sandwich. Repeat with the remaining cookies. Serve and enjoy!
