Crack 6 eggs and separate the yolks from the whites in two bowls. Add 1 teaspoon of vanilla to the egg whites and mix. Set it aside.
In a thick pot, add 1 1/4 cups of granulated sugar, 1/4 cup of cornstarch, and 1/2 teaspoon of salt. Whisk the ingredients. Next, add 4 cups of whole milk and mix well.
Place the pot over low heat and continuously whisk. Cook until you have a thick consistency. If it starts to bubble up, take it off the heat for a second.
Grab 2 cups of the hot milk in one hand while continuously whisking the yolk mixture with your other hand. Slowly drizzle the hot milk. Whisk in the egg yolk mixture into the milk mixture in the pot. Place back over medium heat and whisk gently for 3 to 5 minutes until thickened. Remove from heat.
Add 3 tablespoons of bourbon or whiskey to the mixture. Mix, then add the unsalted butter. Whisk until the butter is melted. Pour into a bowl, cover the top with parchment paper and let it cool for 1 hour.
In another pot or in the same pot but cleaned, add 2 cups of granulated sugar and 1 cup of water. Place over medium-high heat and let it come to a boil, then let it cook for 20 minutes or until light amber color. Do not stir.
Mash the bananas in a bowl. Then add to the sugar. Next, add 1/4 cup of whiskey and 1/4 teaspoon of salt. Whisk well.
Bring back to medium heat and whisk continuously for 5 minutes. After that, reduce the heat to low and add 3/4 cup of cream. Whisk it in until incorporated. Take off the heat and transfer it to a heatproof bowl. Slice the 5 bananas, then toss in your caramel. Let it cool.
Add 1 cup of heavy whipping cream and 2 tablespoons of powdered sugar in a stand mixer bowl. Mix until stiff peaks.
Fill 1/3 of the glass with custard followed by 1/4 cup of the banana caramel, and crushed Biscoff cookies. Repeat the layers, then finish with a dollop of cream, a cookie on top, a slice of banana, and crushed cookies. Serve and enjoy!
