Ingredients:

Caramel Topping:

  • 1 cup granulated sugar
  • 3 tbsp unsalted butter, cubed
  • 2 golden apples (peeled, cored, and sliced)
  • 1 tbsp sweet Pedro Ximenez sherry (optional)

For the Cake:

  • 3 eggs, room temperature
  • 1 cup granulated sugar
  • 1 cup self-rising flour

Directions:

Step 1

Preheat your oven to 350 degrees F. Add 1 cup of granulated sugar in a medium saucepan, and heat it on low until it dissolves and the color turns amber. Next, grease a 10″ baking dish with butter and immediately pour the caramel (try to cover the whole bottom as much as possible). After this, add 3 tbsp cubed butter, scattering them around. Once done, add the sliced apples, placing them all around and covering the dish bottom. Drizzle 1 tbsp sweet Pedro Ximenez sherry (optional), then set aside.

Step 2

In a large mixing bowl, add three eggs and 1 cup granulated sugar. Whisk for a few minutes using an electric mixer until it turns pale. Next, add 1 cup of self-rising flour and continue to whisk until just combined. Pour the batter over the apples and bake in a preheated 350 degrees F oven for 40 minutes. Once done baking, loosen the side with a knife and leave it to cool for five minutes. After this, place a plate on top and swiftly flip the baking dish. Serve and enjoy!
