Ingredients:
- 1 1/3 cups uncooked long-grain white rice
- 2 2/3 cup chicken broth
- 1 lb jumbo shrimp (peeled and de-veined)
- 4 tbsp butter
- 2 garlic cloves
Cajun seasoning:
- 1 1/2 tsp paprika
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp cracked black pepper
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1/4 tsp crushed red pepper flakes
Directions:
Step 1
Put all the cajun seasoning in a small bowl. Add a dash of salt and pepper; set aside. In a skillet at medium heat, add 2 tbsp of butter and melt it. Next, add the pressed 2 cloves of garlic. Continue to stir for a while until the garlic becomes aromatic. Add the rice and continue to stir. Add half of the cajun seasoning into the rice, stir it, then add 2 2/3 cups of chicken broth. Let it come to a boil then simmer.

Step 2
Put all the shrimp in a bowl. Add salt, butter, and the remaining cajun seasoning. Mix all together well. Let it sit for 10 minutes to let the shrimp absorb all the seasoning. Back to the rice; take off the lid and stir it to make sure the bottom is not sticking. After this, add the shrimp and stir them. (Make sure the flame is extremely low at this point.) Put the lid back for about 3-5 minutes to let the shrimp cook. Chopped up some parsley while waiting. After 5 minutes, take the lid off and sprinkle the parsley.
