Ingredients:

  • 2 tsp vegetable oil
  • 1 lb lean ground beef
  • salt and ground black pepper
  • 1 medium yellow onion, finely diced
  • 2 cloves of garlic, minced
  • 4 cups of chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups of low-sodium beef broth
  • 3 cans (8 oz) tomato sauce
  • 1/2 cup white rice, uncooked
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh chopped parsley

Directions:

Step 1

In a large pot over medium-high heat, add 2 tsp vegetable oil, then brown the ground beef. Season with salt and ground black pepper. Next, add the diced onion and minced garlic. Continue to saute until softened. After this, add the chopped cabbage, diced carrots, three cans of tomato sauce, 4 cups of low-sodium beef broth, 1/2 cup of uncooked rice, 1 bay leaf, and 3 tbsp light brown sugar. Mix well.

Step 2

Bring the mixture to a boil, then reduce the heat and simmer for 25 minutes, or until the rice is cooked. In the meantime, finely chopped 2 tbsp of fresh parsley. Back to the soup, remove the bay leaf, and garnish it with the freshly chopped parsley. Serve and enjoy!
