Carrots are one of my go-to veggie side dish recipes, and I love it glazed, like this recipe from RecipeTin Eats on Youtube. Unlike the traditional stovetop recipe, this version is roasted to perfection. It’s super quick and easy and much more fun! Learn how to make it by watching the video below.

Ingredients:

  • 2 lb carrots, peeled
  • 1/4 cup brown sugar, loosely packed
  • 2 garlic cloves, minced
  • 2 tbsp butter, melted
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • parsley, for garnish

Directions:

Step 1

Preheat oven to 425 degrees F. Next, peel and cut your carrots on the diagonal into 1.75″ lengths. Transfer the chopped carrots to a bowl, then add 1/4 cup brown sugar, 2 tbsp melted butter, 1 tbsp olive oil, 2 cloves of minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Mix well until well combined.

Step 2

Transfer the carrots mixture to a parchment paper lined baking tray and place it in the preheated oven. Roast for 15 minutes, toss, then roast again for another ten minutes until soft and caramelized. Garnish with freshly chopped parsley and serve.
