While searching on Youtube yesterday, I found a chicken and broccoli skillet casserole that looked so delicious. The ingredients were really simple things that I always keep on hand, so it wasn’t hard to throw this skillet casserole together, and it didn’t take long at all. My mom was visiting from Houston and I surprised her with it, she really thought I had ordered it from our favorite restaurant down the street. This meal was perfect for 2 people and we even had some leftovers that got eaten for lunch the next day.

Ingredients:

  • 2 tablespoons butter
  • 1 onion (chopped)
  • 1 clove of garlic (minced)
  • 1 chicken breast (sliced into thin strips)
  • 1 large crown of broccoli (cut into small florets)
  • Salt (to taste)
  • Pepper (to taste)
  • 2 bay leaves (optional)
  • 1/2 cup heavy cream
  • 1/2 cup cheddar cheese
  • 1/2 cup parmesan cheese

Directions:

This wonderful tutorial by Olesea Slavinski guides the viewer through this chicken and broccoli skillet casserole recipe. You begin by, sauteeing your onion, garlic, and sliced chicken breast in 2 tablespoons of butter.

Then, you will add the broccoli florets, heavy cream, 2 bay leaves (optional), salt, freshly ground pepper, and your delicious cheddar cheese. The casserole needs to cook for about 5 minutes. When your broccoli is done, you will then sprinkle the one-half cup of parmesan cheese all over the top and let it melt, then add more freshly ground black pepper to the top and serve.
