Place a dutch oven with high sides over medium-high heat. Add the bacon and sausages, and break the sausages into small pieces. Let it cook until browned then drain excess fat.
Add in the chopped onion, and let it cook for about 1 minute. Next, add the chopped red and green pepper and season them with garlic powder, cayenne, salt, and pepper. Let it cook for 2 minutes.
Place the cubed potatoes on top of the ingredients in the dutch oven in an even layer then press them firmly. Add some salt and pepper to season the potatoes then top with chunks of butter.
Place the lid and cook in a 425 degrees F oven until the potatoes are almost fork tender for about 20 minutes.
Remove the dutch oven from the oven then remove the lid. Sprinkle some of the grated cheese on top of the potatoes.
In a mixing bowl, beat the eggs and add a splash of milk and any seasonings you like. Pour the mixture over the potatoes. Gently shake the pan to even the layer.
Place the dutch oven back into the oven at 375 degrees F for about 20 minutes or until the eggs are set.
Serve with sour cream. Enjoy!
