Two of my favorite food in one dish! This breakfast potato omelet recipe by Toasted is so tasty I eat it almost every day. It’s simple yet full of flavors and filling. You’ll get full with just a few slices. Yes, it looks like pizza, but it’s actually made from eggs! Most of the ingredients are probably already in your pantry. How awesome is that? Having this in the morning with a cup of coffee is just perfect. You can also make this snack any time of the day if you want.

Place the thinly sliced potatoes in a bowl filled with cold water. Wash them thoroughly to remove excess starch. This will help in keeping the potatoes from having a sticky texture on the outside. Make sure to use cold water or it will be hard to separate them.
Add two tablespoons of oil to a pan over heat and add the sliced onion. Saute for about 2 minutes.
Next, add the potatoes, 1/8 teaspoon of chili powder, 1/8 teaspoon of turmeric powder, and salt. Saute for about 7 to 8 minutes over medium flame.
Add 2 eggs, salt, 1 tablespoon of coriander, chopped green chilies, and 1 teaspoon of chili flakes to a bowl. Beat well until well combined.
Combine cooked potatoes with the egg mixture.
Add one teaspoon of oil to the same pan and pour the mixture. Tilt the pan to move it around and evenly distribute the potatoes. Cook it until browned. Flip then cook the other side as well.
Slice into four and serve with your favorite sauce. Enjoy while warm!
