Ingredients:

  • 2/3 cup granulated sugar
  • 1/2 cup unsalted butter, softened and room temp
  • 2 eggs
  • 2 tsp baking powder
  • 1/8 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole milk
  • 1 tbsp vanilla paste (or extract)

For the filling:

  • 3/4 cup of whole milk
  • 1 1/2 tbsp all-purpose flour
  • 2 tbsp granulated sugar
  • 1 egg yolk
  • 1 tsp vanilla paste (or 1 envelope of vanilla)
  • small pinch of salt

For the ganache:

  • 4 oz of semi-sweet chocolate chips
  • 1/3 cup of heavy cream

Directions:

Step 1

In a bowl, add 1 1/2 cups of all-purpose flour, 2 tsp baking powder, and 1/8 tsp salt. Mix well and set it aside. Next, in another bowl, add 1/2 cup unsalted butter and 2/3 cup granulated sugar. Whisk it until creamy using a handheld mixer. After this, add two eggs and 1 tbsp vanilla paste. Continue mixing until smooth, then add 1/2 cup whole milk. After this, add the dry mixture and mix everything until well combined. Now, scoop and divide the batter on each cup of your muffin tin. Place the muffin tin in the preheated 350 degrees F oven for 15 to 20 minutes.

Step  2

In the meantime, make the vanilla custard. In a saucepan, add 3/4 cup of whole milk, 1 egg yolk, 2 tbsp granulated sugar, 1 1/2 tbsp all-purpose flour, and a pinch of salt. Whisk to combine, then add 1 tsp vanilla paste. Cook it on the stove over medium heat, stirring constantly, until it thickens. After cooking it, sieve it for any lumps. Once done, cover it with plastic wrap, making sure the plastic is touching the surface so it won’t develop skin. Pop it in the fridge until cooled completely. Now for the ganache, combine 4 oz of semi-sweet chocolate chips and 1/3 cup of hot heavy cream. Leave it for a couple of minutes to let the chocolate completely melts. After this, stir it to combine.

Step 3

Now, start assembling the cupcakes. Grab one, cut it in half, add a spoonful of cream, then put the top back on. Repeat these steps for the rest of the cupcakes. Once done, drizzle the ganache on each top. Serve and enjoy!
