I was searching for make-ahead breakfast ideas on Youtube, and I came across this muffin recipe from The Domestic Geek. These goodies are bursting with blueberry goodness, and it’s super easy to prepare. You can also substitute the blueberries with anything you like; some other berries, nuts, or even chocolate chips. The sky is the limit. 

Ingredients:

  • 3 cups of old-fashioned rolled oats (gluten-free)
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 2 large bananas
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup blueberries

Directions:

Step 1

In a bowl, add the old-fashioned rolled oats, brown sugar, and baking powder. Whisk the brown sugar and baking powder into the oats properly. Next, in another bowl, add the roughly chopped bananas and mash them. Add the milk, two eggs, and vanilla extract. Whisk thoroughly to combine.

Step 2

Transfer the dry ingredients to the wet ingredients and add the blueberries. Mix everything well to combine. Now, scoop the mixture into your muffin tin lined with parchment paper liners. Place it in the oven at 375 degrees F and bake for 25 to 30 minutes.
