It’s summer which means it’s the season of fresh blueberries! Who doesn’t love blueberry recipes? If there is one dessert flavor that I crave over and over again, that would be blueberry! Timely, I found this blueberry biscuit recipe by Tammy at Collard Valley Cooks on youtube! The sweetness and juiciness of this fruit, combined with butter and cream – make a lovely summer dessert for the family. Ingredients:
For the biscuit:
- 1 cup of self-rising flour
- 1/8 cup of room temperature butter
- 1/8 cup of shortening
- 1/2 cup of whole buttermilk
- 1/2 cup of sugar
- 1/2 cup of fresh blueberries
For the glaze:
- 3 tablespoons of melted butter
- 1 cup of powdered sugar
- 1 teaspoon of vanilla
- 2 tablespoons of cream

Directions:
Step 1:
Preheat your oven to 450 degrees F. In a bowl, add butter, shortening, and self-rising flour. Use a fork to blend properly until the mixture is crumbly. Then mix the sugar and buttermilk.
Step 2:
Sprinkle some self-rising flour on the counter surface using a sifter. Place your dough on the countertop, then fold 3 -4 times. Now you can add your fresh blueberries. Next, fold it again 6 -7 times and incorporate the flour into the dough. Add more flour if needed. Flatten the dough about 1/2 – 3/4 inch tall and cut them using a biscuit cutter. After you have them cut, place the biscuits in a well-greased pan.
Step 3:
Bake the biscuits for approximately 20 minutes at 450 degrees F or until golden brown. Then prepare the glazing.
Step 4:
Glazing. Combine room temperature butter, powdered sugar, vanilla, and milk in a bowl. Mix them until nice and creamy.
Remove the biscuits from the oven and spread the glaze on top while warm. Now you have this delicious dessert to enjoy!
