Ingredients:

  • 1 (15 oz) can black beans, drained and rinsed
  • 1 1/2 lb sweet potatoes, peeled and chopped
  • 1 cup green bell pepper, diced
  • 1/2 cup canned corn kernels
  • 1/2 cup red onion, chopped
  • 1/4 cup pickled jalapenos
  • 1 avocado, diced

Lime Dressing:

  • 1 cup cilantro
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice
  • 2 tbsp maple syrup
  • 1 clove garlic
  • 1 tsp grated ginger
  • 1 tsp salt

Directions:

Step 1

To start, prep and chop the ingredients accordingly and set them aside. Next, add the chopped sweet potatoes to a baking sheet and season with a drizzle of olive oil, salt, and black pepper. Bake them in the oven at 400 degrees F for 30 minutes. In the meantime, make the dressing. Add 1 cup cilantro, 1/4 cup extra virgin olive oil, 1/4 cup lime juice, 2 tbsp maple syrup, 1 clove garlic, 1 tsp grated ginger, and 1 tsp salt in your food processor and blend them for a few seconds. Transfer to a bowl once done.

Step 2

In a large mixing bowl, add a can of black beans, 1 cup diced green bell pepper, 1/2 cup canned corn kernels, 1/2 cup chopped red onion, 1 diced avocado, and the baked sweet potatoes. Drizzle the lime dressing and toss gently until well combined. Serve with the pickled jalapenos on top. Enjoy!
