Who says eating nutritious food requires more time and effort? There are actually tons of recipes out there that are very quick to prepare. You just need to widen your knowledge about the ingredients you can use for different dishes. Be creative! I bet you’ll be surprised how easy it is to make food that’s good for you. One of my favorites is this recipe by The Stay at Home Chef. It’s so refreshing, creamy, juicy, and full of flavors and textures. The corn, combined with avocado, tomatoes, and black beans is way too good to resist. My whole family loves this, that’s why we make sure to make this at least once a week. Place the corn kernels in a microwave-safe bowl and thaw for about 3 to 4 minutes, stirring every 90 seconds.
Add corn with black beans, diced tomatoes, diced bell pepper, diced avocado, minced onion, and chopped cilantro. Toss everything until well combined.
Make the dressing. Add 1/4 cup of lime juice, 1/4 cup of extra virgin olive oil, 2 cloves of minced garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of red pepper flakes in a small bowl. Whisk everything together until mixed.
Pour the dressing over the salad and toss everything to combine using a wooden spoon.
Serve and enjoy while freshly made. Consume immediately.
