This Olive Garden gnocchi copycat soup recipe by Ashley. The Recipe Rebel on YouTube is possibly better and compares to the original recipe. It’s loaded with tender chicken, chunks of vegetables, spinach in a creamy broth. There are so many of my friends obsessed with gnocchi, but I never understood why because I haven’t had much of it. However, this recipe looks simple and amazing. Plus, you can make a whole pot that’s worth the price instead of one bowl at Olive Garden.

Ingredients:

  • 2 tablespoons oil
  • 1/2 medium onion finely chopped
  • 2 ribs celery finely chopped
  • 1 cup carrot matchsticks (or finely chopped carrots)
  • 1 teaspoon dried parsley
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 boneless skinless chicken breasts cut into 1/2″ pieces (or whole, see recipe instructions)
  • 4 cups low sodium chicken broth
  • 3/4 cup heavy cream
  • 1 tablespoon corn starch
  • 3 cups small gnocchi (500g)
  • 1 1/2 cups fresh spinach roughly chopped
  • 1/4 cup grated Parmesan cheese

Directions:

First, in a large dutch or soup pot, add oil and cook onion, celery, carrots over medium-high heat until slightly softened. Add the seasoning to the pot, chicken breasts, and broth, and bring to a simmer over medium-high heat. Continue to watch Ashley. Next, whisk in the cream and cornstarch and stir into the pot with gnocchi. Let it simmer for 4-5 minutes until gnocchi is tender and soup is slightly thickened. Then, stir in the spinach and parmesan last.

The texture of gnocchi is not for everyone, I like how thick and chewy that can be. It looks healthy and nutritious that’s packed with wholesome ingredients. This would be a great soup to try out and make because it is a popular soup dish at Olive Garden.
