Preheat your oven to 400 degrees F and lightly grease a 9 x 13 pan. Cook 12 oz of egg noodles according to package instructions. Meanwhile, put together the sauce. In another pan, melt 3 tbsp of butter over medium heat. Once it’s melted, add in half of a white diced onion. Saute it for about 5 minutes. When the onions are soft and translucent, go ahead and add 3 cloves of minced garlic along with 3 tbsp of all-purpose flour. Stir it all together. Next, pour 2 cups of chicken broth followed by 1 cup of milk. Stir it all well and bring it to a simmer and cook until it’s thickened and then remove it from the heat.

Pour your cooked pasta into your greased 9 x 13 pan evenly. Back to the sauce, add 2 cans of solid white albacore tuna and 2 cups of frozen peas. Stir it in. Take the sauce and pour it directly over the egg noodles, then add 2 cups of shredded cheddar cheese. Now, combine 1 cup of panko bread crumbs, 1/4 cup of grated Parmesan cheese, and 3 tbsp of extra virgin olive oil. Sprinkle the bread crumbs mixture all over the top of the casserole in a nice even layer. Place it in the preheated oven and bake for about 20 to 25 minutes until the top is golden brown.
