Who doesn’t love the Fall season and all those treats that come with it? It’s definitely my favorite season, along with these pumpkin cookies from Preppy Kitchen on YouTube. These cookies, for me, are the definition of Fall itself. All the spices and flavors of the cozy season are squeezed in with these little treats. You and your family will love this recipe for sure! Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp cardamom
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 egg, large
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract

For the Icing:

  • 2 cups powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla

Directions:

Step 1

Preheat your oven to 350 degrees F. Next, sift 2 1/2 cups all-purpose flour, 1 tsp baking soda, 1 tsp baking powder, 1/2 tsp salt, 2 tsp ground cinnamon, 1/2 tsp ground ginger, 1/2 tsp allspice, 1/4 tsp cardamom, and 1/4 tsp nutmeg in a large bowl. Whisk them together and set aside. Next, into the bowl of your stand mixer, add 1/2 cup unsalted butter and 1/2 cup granulated sugar, and give it a quick mix. After this, add 1 cup of light brown sugar. Continue mixing until it’s fluffy and smooth, then add 1 large egg and 1 tsp vanilla extract. Mix until combined.

Step 2

Now, add 1 cup of pumpkin puree and continue to mix until smooth, then add the dry mixture. Mix until just combined. After this, cover the bowl and chill for about 30 minutes to two hours. After chilling, scoop 1 1/2 to 2-inch rounded balls into a parchment paper-lined baking sheet. Give each a little bit of roll just to round them out, then bake them in a 350 degrees F oven for 11 minutes. In the meantime, make the icing. Combine 2 cups powdered sugar and 3 tbsp milk. Mix well, then stir in 1 tsp vanilla. Once done, transfer the icing into a piping bag and drizzle it across the top of the cookies.
