Fluffy interior, crispy outside, and seasoned well, these pan-fried potatoes will complete that special dinner with family. It’s also pretty quick to make and only needs 30 minutes. 

Ingredients:

  • 120 ml vegetable oil
  • 3 medium floury potatoes, peeled and  chopped into 1″ chunks
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 fat clove of garlic, peeled and minced

Directions:

Step 1

Peel and chop your potatoes into one-inch chunks. Place them in a pot of cold water and bring them to a boil, then simmer for five minutes. After this, turn off the heat and drain off the water. Set aside.

Step 2

Heat your vegetable oil over high heat in a large pan. Once it’s heated through, place the potatoes and cook on high turning often until lightly browned for about five minutes. Season with 1/2 tsp salt and 1/2 tsp ground black pepper. Cook again, turning often for a further five minutes until golden brown. Turn off the heat, allow the potatoes to cool for 30 seconds, then add the garlic to the pan. Give it a good stir to infuse the garlic flavor in the potatoes, then serve.
