  • 3 bell peppers
  • 2 lbs of ground beef
  • 1/2 yellow onion
  • 1/2 bell peppers
  • 1 cup of cooked rice
  • 1/4 black beans
  • 1/4 corn
  • provolone cheese/Mexican cheese/cheddar cheese
  • 8 oz of mozzarella cheese
  • 1 pack of taco seasoning
  • 1 tablespoon of creole seasoning
  • 1 tablespoon of chicken bouillon
  • 1 tablespoon of garlic powder

How to Make Mexican Stuffed Bell Peppers

Step 1:

Cut a little part of the bottom so the bell pepper sits flat. Next, cut the top, then remove the core and seeds. Place in a baking dish and bake at 350F for about 10 minutes.

Step 2:

Finely diced the top part of the top of bell peppers. Do the same for yellow onion.

Step 3:

Place a skillet over heat, then add the ground beef. Cook for a few minutes then add the diced vegetables.

Step 4:

Once it has browned, add the seasonings, cooked rice, beans, and corn. Mix until well combined.
