Ingredients:
- 2 zucchini (sliced into small pieces)
- 1 onion (diced)
- 2 carrots (peeled and cut into cubes)
- 2 potatoes (peeled and sliced into small pieces)
- butter
- oil
- salt to taste
- fresh ground black pepper
- 1/5 cup plus 1/3 cup of whipped cream
- 33.8 oz of vegetable broth
- 1 chili pepper (sliced)
- 3 cloves of garlic (cut into thin slices)
- fresh parsley

Instructions:
Step 1:
Place a pot over heat. Add some butter and oil. Once the butter is melted, add the diced onion. Cook until soft. Next, add the sliced garlic.
Step 2:
Add the sliced potato and carrots to the pot. Mix and cook for a few minutes. Next, add the sliced zucchini and vegetable broth. Stir and let it come to a boil. Once boiling, add the chili pepper. Cover the pot with the lid and let it cook for about 20 minutes.
Step 3:
Turn off the heat and puree the vegetables using an immersion blender. Blend the soup until smooth and thick.
Step 4:
Turn the heat back on and mix it. Add the whipped cream then season it with salt and fresh ground black pepper. Stir to combine, then bring the soup to a boil. Taste it and make necessary adjustments to the seasonings if needed. Once boiling, turn off the heat.
Step 5:
Serve the soup in individual bowls and garnish with freshly chopped parsley. Enjoy!
