Ingredients:

  • 3 tablespoons of unsalted butter
  • 1 large peeled and small diced yellow onion
  • 4 cloves of garlic (finely minced)
  • 2 lb of assorted mushrooms (cleaned and sliced)
  • 1/2 cup of white wine
  • 1/2 cup of all-purpose flour
  • 3 quarts of chicken stock
  • 1 1/2 cups of heavy whipping cream
  • 3 tablespoons of fresh parsley (finely minced)
  • 1 tablespoon of fresh thyme (finely minced)

Instructions:

Step 1:

On a large pot over low heat, add 3 tablespoons of unsalted butter and the onions. Mix together and cook until well caramelized for about 45 minutes.

Step 2:

Add the finely minced garlic and let it cook for about 1 to 2 minutes or until fragrant.

Step 3:

Add sliced mushrooms but set aside 1 1/2 to 2 cups of mushrooms. Turn the heat to medium-high. Saute them for about 15 to 20 minutes or until cooked down. Stir often to avoid burning.

Step 4:

Deglaze it with 1/2 cup of white wine and cook until it has been absorbed by the mushrooms for about 5 minutes. Stir often.

Step 5:

Add in 1/2 cup of all-purpose flour, and 3 quarts of chicken stock into the pot. Turn the heat to high and bring it to a boil until it has a thick consistency.

Step 6:

Using a hand blender puree the soup on high speed. You can also use a normal blender but make sure to remove the center cap and place a towel over top so it won’t explode. Puree it until it has a smooth consistency.

Step 7:

Add 1 1/2 cups of heavy whipping cream, salt, fresh black pepper, and chopped parsley and thyme into the pot. Give the soup a good mix.

Step 8:

Place a pan on high heat and add 2 tablespoons of olive oil. Saute the 1 1/2 to 2 cups of mushrooms for 4 to 5 minutes. Season with salt, pepper, thyme, and parsley. Mix, then remove from heat.

Step 9:

Fill a bowl of the soup into a bowl and put the sautees mushroom on top. Serve and enjoy!
