This salad recipe is not only easy to make, but it is also good for you. It will only take you 20 minutes or less to make this at home. The 15 minutes for soaking the onions and 5 minutes to put all the ingredients together. How fast is that? You can serve it with an egg salad sandwich, roasted chicken, or salmon.

Chop the onion and place in a bowl of cold water. Let it soak for about 15 minutes, then drain and pat dry using paper towel.
In a food processor, add the onion, garlic cloves, oil, vinegar, and cumin in a food processor.
Add the carrots in a large bowl, then pour the homemade dressing. Add the herbs and then toss. Taste and season with salt. Serve and enjoy!
