I love brownie cookies as they are a combination of my two favorite treats: brownies and cookies. And my favorite recipe for this is this fudgy brownie cookie from Hot Chocolate Hits on Youtube. This recipe is my go-to whenever I crave some brownie cookies. It’s easy, fudgy, and gooey – everything you would want in your brownie cookie. Ingredients:

  • 2/3 cup all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp instant espresso powder (optional)
  • 1 1/2 cups dark chocolate, broken into pieces
  • 1/4 cup unsalted butter, cubed
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips or chunks
  • 1/2 cup walnuts, roughly chopped
  • flaky sea salt, for topping

Directions:

Step 1

In a bowl, combine 2/3 cup all-purpose flour, 2 tbsp unsweetened cocoa powder, 1/4 tsp salt, 1 tsp baking powder, and 1 tsp instant espresso powder (optional). Mix well. Next, transfer the broken chocolate into a small saucepan together with 1/4 cup cubed unsalted butter. Melt them in very low heat until smooth. After this, set it aside to cool. In another bowl, crack two eggs and add 1/2 cup granulated sugar, and 1/2 cup brown sugar. Mix well until fluffy, then add the melted chocolate. Gently combine, then stir in the flour. Fold until the flour is no longer visible.

Step 2

Now, add 1/2 cup of chocolate chips and 1/2 cup roughly chopped walnuts. Mix until well combined, then cover the dough with cling wrap, and chill it in the fridge. After chilling, scoop 2 tbsp of the dough and place it on a parchment paper baking sheet. Bake them in a 350 degrees F oven for twelve to fourteen minutes or until they have spread slightly. (The top should also become crackly but set.) After baking, sprinkle the tops with some flaky sea salt.
