This pumpkin bread recipe from Bigger Bolder Baking on Youtube is a quick yet super tasty bread recipe you can try. Ingredients:

  • 1 cup pumpkin puree
  • 1 & 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 2 eggs
  • 1 & 3/4 cups of all-purpose flour
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

For the maple glaze:

  • 1/2 cup butter
  • 1 cup powdered sugar (more if the glaze is too runny)
  • 2 tbsp maple syrup

Directions:

Step 1

In a big bowl, add the eggs, oil, milk, sugar, and pumpkin puree, then whisk all the ingredients well and set aside. Next, Combine flour, nutmeg, cinnamon, a little bit of salt, and baking soda. Mix these ingredients well. Bring back the wet ingredients mixture, then dump in the dry mixture. Whisk all together until there are no more lumps. After this, pour the batter into your lined loaf tin. Bake it at 350 degrees F for 55 to 60 minutes.

Step 2

While waiting, go ahead and make the glaze on top. In a bowl, combine some melted butter, a little bit of maple syrup, then some powdered sugar. Whisk it all together until it’s nice and smooth. After the bread has been cooked, let it cool off for 20 minutes before pouring the glaze on top, then let it set for 30 minutes.
