Make the sauce. In a small bowl, combine cumin, oregano, garlic powder, avocado oil, orange juice, lime, kosher salt, and black pepper. Adjust the amount of seasonings depending on your preference.
Place the meat on a plate and drizzle with avocado oil. Season with salt and pepper on both sides. Heat your grill and grease it. Once hot, grill your seasoned meat. When one side is done, flip it over and baste it with your sauce. Repeat to the other side. Grill until fully cooked over medium-low heat. Internal temperature should be 145F.
Place your cast iron pan griddle into the grill and let it heat while assembling the sandwich.
Slice your Cuban bread in half. Spread a layer of mustard on one side. Next, add a layer of black forest ham folded in half.
Slice the meat into thin pieces, then add on top of the ham.
Add a layer of Swiss cheese and pickles. Brush the other half bread with the marinade, then spread butter on top. Place on the cast iron pan upside down. Butter the bottom, flip, and grill the other side.
Remove from the grill, slice in half, and enjoy!
