Pat the chicken very dry using a paper towel. Season them with salt and pepper. Place a pan over medium heat, and add some olive oil. Once heated, add the chicken skin side down and sear for about 5 minutes. Add a bit of butter while searing. Flip it to the other side, and cook for 3 more minutes. Continue cooking for the next batches.
In the same pan, add the veggies and cook for about 7 minutes until soft. Turn the heat to medium and put the mushrooms, and cook until they release some of the liquids. Season with a pinch of salt and add the garlic. Cook for about 1 minute, then add the flour. Mix until well combined. Add the low-sodium chicken stock and bring it to a boil.
Transfer back the seared chicken into the pot. Add the parsley and thyme. Let it boil for 3 to 4 minutes then lower it to a simmer. Partially cover your pan for 30 minutes. Halfway through, flip the chicken over.
In a bowl, combine the egg yolks, and 1/4 cup of cream.
Remove the chicken from the sauce. Pour some of the tablespoons of the sauce into the egg yolk mixture while continuously stirring. Once done, pour into the sauce while mixing. Taste and adjust seasonings if needed.
Put back the chicken and let it cook for a couple of minutes. Serve and enjoy!
