Ingredients:

For the dough:

  • 3 & 1/2 cups of all-purpose flour
  • 2 tsp salt
  • 3 tsp instant dried yeast
  • 3/4 cup milk
  • 1/3 cup water
  • 2 large eggs
  • 1/4 cup honey
  • 1/4 cup melted butter (or vegetable oil)

For the filling:

  • 1/2 cup butter
  • 1 & 1/4 cups packed light brown sugar
  • 2 & 1/2 tbsp ground cinnamon
  • 1 cup pecans

Cream cheese glaze:

  • 4 oz cream cheese (room temperature)
  • 1 cup powdered sugar
  • 1/4 cup butter (room temperature)
  • 1/2 tsp vanilla extract

Directions:

Step 1

In a large bowl, add 3 & 1/2 cups of all-purpose flour, 2 tsp salt, and 3 tsp dried yeast. In a separate jug, add 3/4 cup milk, 1/3 cup water, 1/4 cup honey, and 1/4 cup butter. Heat it in the microwave until the butter melts, then whisk in 2 large eggs. Keep whisking until they’re all combined. Now, add the liquid to the dry mixture and mix it until there are no more lumps of flour left. After this, cover it in cling film, put a tea towel on top, and proof at room temperature for 2 hours. After dough proofing, put it in the fridge overnight. For the cinnamon filling, melt 1/2 cup of butter in a bowl, then add 1 & 1/4 cups of brown sugar, and 2 & 1/2 tbsp ground cinnamon. Mix them.

Step 2

Now, transfer your dough to a floured surface. Roll out the dough, toss a little flour on top, then continue rolling lengthwise. After rolling out the dough, spread the filling on top evenly, then scatter some pecans (you can also use nuts or raisins.) Now, roll up your dough. Make a tight roll and then work your way towards the edge. After this, slice your dough 2″ thick with a sharp knife. Place your rolls in a deep baking tray lined with parchment paper. Cover them in cling film, put a towel on top, and let them rise for about 30 minutes. After 30 minutes, place the cinnamon rolls in the oven at 375 degrees F for 40 to 45 minutes or until golden brown. While the cinnamons are baking, it’s time to make the cream cheese glaze. In a bowl, add 4 oz cream cheese and 1/4 cup butter. Mix them together with a whisk until combined,  then add 1 cup powdered sugar and 1/2 tsp vanilla extract. Mix until well combined. Spread the cream cheese glaze over the cinnamon rolls while they’re still warm.
