Here’s the best chicken salad with grapes and pecans recipe by Rachel cooks with love on Youtube. It has a delicious and creamy sauce made from mayonnaise, dijon mustard, honey, lemon juice, and zest. Plus, the chicken cubes are juicy! I am sure this will going to be a hit in your home. Place a dutch oven over high heat, add the chicken, and fill with water until they are submerged. Add 1 teaspoon of salt, 1/3 teaspoon of peppercorns, a small piece of onion, 1 celery rib, and 1 teaspoon of salt. Wait until the water comes to a boil, and lower the temperature to simmer between 15 to 18 minutes. Do not overcook the chicken. Once done, remove from water.
In a pan, add melted butter, 1/2 cup of pecans, and a pinch of salt. Toast it around until they have a nice even color for about 3 to 4 minutes. Set aside on a plate once done. Chop them into small pieces.
Chop the chicken into cubes, place on a plate, and cover.
In a small bowl, add mayonnaise, cream cheese, honey, and mustard. Whisk to combine. Transfer into a big bowl, add the celery, green onions, chopped pecans, cranberries, grapes, zest and juice of lemon, garlic powder, pepper, and salt. Mix everything until well combined.
Add the chicken cubes into the mixture and toss around. Slice the warm croissant in half and add the chicken salad. Serve with grapes and chips on the side. Enjoy!
