Ingredients:

  • 4 boneless skinless chicken breasts
  • salt and freshly ground pepper
  • 1/3 cup all-purpose flour
  • 2 large eggs (beaten)
  • 1/2 cup Italian breadcrumbs
  • 1 cup panko bread crumbs
  • 1 cup olive oil (for frying)
  • 2 cups mozzarella (shredded)
  • 1/2 cup freshly grated parmesan
  • 24 oz marinara
  • 3 tbsp chopped parsley
  • fresh basil and parsley leaves (for garnish)

Directions:

Step 1

Preheat the oven to 425 degrees F. Next, cut the chicken breasts down the middle for them to cook quickly. After this, cover them with a saran wrap and pound them into fillets. Set them aside. Next, in a bowl, cracked 2 eggs, season with a pinch of salt and pepper, then whisk. Get another bowl and add 1/3 cup of all-purpose flour. Season with a bit of salt and pepper, then mix it. In the last bowl, add 1 cup of panko bread crumbs, 1/2 cup of parmesan cheese, 1/2 cup of Italian bread crumbs, and 1 tbsp of chopped parsley. Give it a quick mix. After this, dip the chicken into the flour mix, and shake off the excess. Next, dip it into the egg mixture, then coat it with the bread crumbs mixture. Place it on a baking sheet. Repeat the process to the rest of the chicken fillets.

Step 2

Pour a cup of olive oil into a big pan and turn on the stove at medium-high heat. When the oil reached the right temperature, start frying the fillets. Fry them for about three to four minutes per side. Place them back on the baking sheet after frying them, then add marinara and mozzarella cheese on the top of each fillet. After this, add some more cheese by adding a tablespoon of grated parmesan to each. Place them in the oven for about 15 to 20 minutes.
