With this cold weather, all I want is warm and satisfying food that can comfort me – one of my favorites is this dish by Smokin’ & Grillin with AB on Youtube. It’s the best chicken and dumplings recipe I have ever tried! My whole family instantly loved it the first time I cooked it at home. Watch the video below for the full instructions.

Ingredients:

  • 3/4 cup of all-purpose flour (divided)
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of freshly ground pepper
  • 1 chicken (cut up)
  • 2 tablespoons of oil
  • 1 large onion (chopped)
  • 2 medium carrots (chopped)
  • 2 celery ribs (chopped)
  • 3 garlic cloves (minced)
  • 6 cups of chicken stock
  • 1/2 cup of apple cider
  • 2 teaspoons of sugar
  • 2 bay leaves
  • 5 whole peppercorns

For the dumplings:

  • 1 and 1/3 cups of all-purpose flour
  • 2 teaspoons of baking powder
  • 3/4 teaspoon of salt
  • 2/3 cup of milk
  • 1 tablespoon of melted butter

For the soup:

  • 1/2 cup of heavy whipping cream
  • 2 teaspoons of parsley
  • 2 teaspoons of thyme
  • salt and pepper to taste

Instructions:

Step 1:

In a bowl, add half a cup of flour, kosher salt, and black pepper. Mix well.

Step 2:

Place a dutch oven on low flame, and add 2 tablespoons of oil. Coat the chicken parts with the seasoned flour and place them on the bottom of the pot. Cook until browned, then remove from the pot.

Step 3:

In the same pot, add the onions, carrots, minced garlic, and celery. Cook for 1 minute. Mix in half a cup of flour and let it cook. Continuously mix while you pour the chicken broth. Let it come to a simmer. Once simmering, add apple cider vinegar, sugar, bay leaves, and peppercorns. After that, transfer the chicken back to the pot. Place the lid and cook it for about 25 minutes at a simmer.

Step 4:

Make the dumplings. Put flour, baking powder, and salt into a bowl.  Mix everything well with a whisk. In a different bowl, combine the milk and melted butter. Gradually add the dry mixture, mixing after every addition. Mix until it forms a dough. Keep kneading until it sticks well together. Pull off little pieces of dough, form them into balls, then place them on a baking sheet.

Step 5:

Remove the chicken from the pot and place them in a bowl. Skim the fat off at the top using a spoon. Next, shred them using two forks. Add them back to the soup. Cook until it comes to a little boil then lower it to simmer.

Step 6:

Add the dumplings to the soup. Cover it with a lid and cook for 15 minutes. After 15 minutes, use a toothpick to check if the dumplings are cooked.

Step 7:

Add the heavy cream, parsley, and thyme to the soup.  Mix everything and serve.
