Start by preheating your oven to 350F and grease an 8-inch square baking dish with 1 tablespoon of butter.
Break the bread into pieces and add to the buttered baking dish.
Add the remaining 2 tablespoons of butter in a small bowl and melt in the microwave. Drizzle it over the bread pieces.
In a mixing bowl, add the remaining ingredients and mix until well combined. Pour over the bread, coating each piece.
Place inside the preheated oven and bake for about 45 minutes or until the top of the bread pudding springs back when you touch it with a fork.
This step is optional. Make the vanilla sauce. In a small saucepan, add 3 tablespoons of salted butter and melt on high heat. Once it melts, turn the heat to medium and let the butter brown. Next, add a tablespoon of brown sugar and a teaspoon of vanilla extract. Stir everything together, then take off from heat. Let it cool for about 1 to 2 minutes. Whisk the brown sugar and butter mixture together and slowly pour on top of the baked bread pudding.
