I like making this twice a week, and every time it’s on the dinner menu, I’m sure everyone will have a clean plate after the meal. So, if you’re planning out your weekly menu, why don’t you insert this fantastic dish? You won’t regret it, trust me.

Ingredients:

  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • salt, to taste
  • 2/3 cup water
  • 1 red bell pepper, cut into 1″ strips (optional)
  • 2 1/2 cups Old El Paso Thick “n Chunky Salsa
  • 1 can sweet corn kernels
  • 6 flour tortillas, for soft tacos & fajitas
  • 2 cups shredded Colby-Monterey Jack n Cheese blend

Directions:

Step 1

Preheat your oven to 350 degrees. In a large pan, add the ground beef and cook until browned (five to seven minutes). Drain the excess liquid and season with 2 tbsp taco seasoning. Mix well. Next, add 2 1/2 cups of chunky salsa, 1 can of sweet corn kernels, some salt to taste, and 2/3 cup water. Stir everything well and simmer for three to four minutes. Remove from heat once done.

Step 2

Cut the tortillas into half and set aside. Next, grease a 9 x 13 casserole dish with a nonstick cooking spray, then lay the halved tortillas at the bottom. Layer half of the beef mixture then spread 3/4 cups of the shredded cheese. After this, layer the remaining tortilla halves and the remaining beef mixture. Top everything with the remaining shredded cheese. Cover the casserole dish with aluminum foil, place it in the preheated oven, and bake for 34-40 minutes. Once done baking, let it sit for a few minutes and garnish it with some sliced jalapenos.
