Easy Beef and Potato Stew Ingredients
- 35 oz beef (cut into chunks)
- 10 cloves of garlic
- 5 slices of ginger
- 3 stalks of green onion (cut into 2-inch pieces, stem and leaves separated)
- 4 tablespoons of soy sauce
- 2 tablespoons of dark soy sauce
- 1 tablespoon of sugar
- 1/4 cup of rice wine
- 3 cups of hot water
- 28 oz potato (peeled and cut into 1 1/2″ chunks)
How to Make Beef and Potato Stew
Step 1:
Place a pan over medium-high heat and add oil. Once the oil is hot, add the beef and cook until browned. Flip, then cook the other side until browned. Transfer to the plate.
Step 2:
Place a large pot over medium-high heat and add oil. Once hot, add the ginger slices, garlic cloves, and the stem part of green onions. Saute until fragrant, then turn the heat to low.
Step 3:
Add 2 tablespoons of dark soy sauce and 1 tablespoon of sugar. Mix well, then let it boil. Once boiling, add the rice wine. Let the liquid come back to a boil.
Step 4:
Add the seared beef and hot water. Place the lid and let it come to a rolling boil over medium-high heat. Once boiling, turn the threat to low. Cook for 1 1/2 hours. Check halfway through the cooking time to ensure the liquid doesn’t get too low.
Step 5:
Add the sliced potatoes and stir until well combined. Replace the lid and turn the heat to medium-low heat for 15 minutes.
Step 6:
After 15 minutes, add the leafy green part of the green onion.
Step 7:
Serve and enjoy!
