Ingredients:

  • flank steak beef
  • 1/2 tsp salt
  • 1/2 tsp crushed bouillon
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1 tsp dried thyme
  • 4 medium Russet potatoes, chopped
  • 2 1/2 cups of water

Veggie Stir-Fry:

  • 2 tbsp butter
  • 1 small onion, chopped
  • 3 – 4 cloves of garlic, minced
  • 2 Scotch bonnet pepper, chopped
  • 2 carrots, sliced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/2 tsp salt
  • 1/2 tsp chicken bouillon
  • 1/2 tsp ground black pepper
  • fresh thyme and basil
  • slurry (1 tbsp cornstarch + 1 tbsp of water)

Directions:

Step 1

Chop the flank steak into small cubes, then season with 1/2 tsp salt, 1/2 tsp crushed bouillon, 1/2 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, and drizzle some olive oil. Mix well, making sure each piece is seasoned properly. Once done, cover the mixing bowl with plastic wrap and marinate the meat for one hour. Next, heat some cooking oil in a large pan, then add the marinated beef. Sear them until brown, then add the chopped potatoes. Pour 2 1/2 cups of water, season with some salt, then put on the lid. Simmer for eight to ten minutes.

Step 2

In another pan, melt 2 tbsp butter, then add the chopped onions and minced garlic. Saute until fragrant. Next, add the sliced carrots, diced red and green bell pepper, and chopped Scotch bonnet pepper. Season with 1/2 tsp salt, 1/2 tsp chicken bouillon, and some fresh thyme and basil. Saute the veggies for five minutes. Once done, add the veggies to the beef and potatoes, and add the slurry to thicken the sauce. Mix well, cover the pan with its lid, then simmer for 3 to 4 minutes. Serve and enjoy!
