Ingredients:

For the Brisket:

  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp kosher salt
  • 2 tsp ground black pepper
  • 2 tsp dried mustard
  • 2 tsp cumin
  • 1/2 cup brown sugar
  • 1 (4-lb) brisket, trimmed

Cowboy Butter:

  • 1 cup butter
  • 3 cloves garlic, minced
  • 1 shallot, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground chipotle pepper
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tsp whole-grain mustard
  • 1 tbsp Italian parsley, minced

Directions:

Step 1

To make the rub, combine 1 tbsp smoked paprika, 1 tbsp garlic powder, 1 tbsp onion powder, 1 tbsp kosher salt, 2 tsp ground black pepper, 2 tsp dried mustard, 2 tsp cumin, and 1/2 cup brown sugar in a bowl. Mix well, then coat both sides of the brisket with the rub mixture. Once done, cover the brisket with plastic wrap and put it in the fridge for five hours (or overnight). After this, remove the brisket from the fridge and let it sit for an hour on the counter.

Step 2

In the meantime, add 4 cups of mesquite wood chips in a bowl, cover it for an hour, then drain. After this, add the wood chips to your griller and heat it to 225 degrees F. When the chips begin to smoke, turn off the burner. Now, insert a thermometer into the thickest part of the brisket, then place it fat up on the cool side of the barbecue. Continue cooking the meat until it reaches 195 degrees F (approx. five hours). Then, transfer the brisket to a cutting board. Let it rest for 30 minutes.

Step 3

Meanwhile, make the cowboy butter. Melt 1 cup butter in a saucepan, then add 3 cloves of minced garlic, 1 minced shallot, 1/2 tsp smoked paprika, 1/2 tsp ground chipotle pepper, 1/2 tsp salt, 1/4 tsp ground black pepper, 2 tsp whole-grain mustard, and 1 tbsp minced Italian parsley. Stir to combine, then remove and turn the heat to low to keep the butter mixture warm. Now, slice the brisket against the grain and serve it with the cowboy butter. Enjoy!
