It’s a great holiday dessert to make or to go along with after a southern meal. The shortbread cookies make this banana pudding unique, and I’m used to banana puddings with only vanilla wafers. I’m not a big banana pudding fan, but this recipe looks amazing with all of the cookies in every bite. I think the cookies add a great texture to the smooth pudding consistency.
First, prep all of your ingredients such as slicing the bananas. Then, in a medium saucepan, whisk together sugar, cornstarch, salt, milk, and egg yolks. Next, assemble the banana pudding. Start off with a serving container of your choice, and start spooning 1/3 of the pudding mixture to the bottom and spread evenly. Then, top pudding off with a layer of Nilla wafers. Fill the spaces with crumbled Lorna Doone cookies, and add another layer of bananas. Continue to layer the banana pudding until it is filled.
This banana pudding looks so good because there are so many layers. I love how it’s in a clear and tall serving dish because the visual of the stacked layers looks impressive.
