This banana pudding icebox cake recipe by Food52 on YouTube is a no-bake dessert that is good for any time of the year. This is a quick and easy icebox cake to make, and I love how unique this recipe is merging 2 types of desserts into one. The banana pudding icebox cake requires only 5 ingredients to make and it’s inexpensive and affordable. I can just imagine how this dessert would taste with the fluffy cream and bananas. The best part of this type of cake would be the layers when the cake is cut into slices. It’s unbelievable to see the layers of bananas, cream and vanilla wafers. I need to make this for a family gathering in the summer.

Ingredients:

  • 2/3 cup malted milk powder
  • 1 pinch kosher salt
  • 2 cups heavy cream
  • 4 ripe bananas, peeled and sliced (about as thick as the wafers)
  • 7 ounces vanilla wafers

Directions:

First, line a loaf pan with saran wrap with a fair amount that overhangs. Add the malted milk powder and salt to a bowl. Add a splash of cream and whisk together. Continue this step until all of the cream is added so there are no lumps. Whip the cream until stiff peaks form. Continue to watch Food52 tutorial on YouTube for full instructions and details.

Next, layer the loaf pan with a single layer of vanilla wafers on the bottom, a layer of whipped cream, a single layer of banana, and top it off with whipped cream. Repeat until all of the cream is used up. Chill in the fridge for about 12 hours wrapped in the plastic before serving.

Overall, this seems like a chilled cake to have during the summer and banana pudding is such a soul food dessert. I’ve never had it in cake form, and specifically, an icebox cake version.
