Preheat your oven to 350 degrees F. In a large bowl, combine all the dry ingredients: 2 cups whole grain spelt flour, 2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt, and 1/2 tsp cinnamon powder. Mix well and set aside. Mash three ripe bananas in another bowl, then add two eggs, 1/2 cup buttermilk, 1/2 cup peanut butter, and 1 tsp vanilla extract. Mix, then gradually add 1/2 of the dry mixture. Do not overmix. After this, fold in the rest of the dry mixture. Once done, reserve a little portion for later.
Now, add 1/3 cup unsweetened cocoa powder, mix, then fold in 6 oz chocolate of choice (reserve some for later). Grease your muffin pan with nonstick cooking spray, then divide the batter among the tin cups. After this, divide the reserved batter on each top, then swirl using a bread knife. Sprinkle the reserved chopped chocolate on top. Place the muffin pan in the preheated oven for 20 minutes. After baking, let the muffins rest for five minutes before removing from the pan.
