Ingredients:

For the banana bread layer:

  • 4 bananas (as ripe as possible)
  • 4 tablespoons of vegetable oil
  • 1 egg
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 1/2 cup of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 teaspoon of cinnamon

For the cheesecake layer:

  • 32 ounces cream cheese (softened)
  • 1/2 cup of sugar
  • 1 tablespoon of vanilla extract
  • 1 cup of milk
  • 1 tablespoon of gelatin powder
  • caramel for drizzling

Instructions:

Step 1:

Preheat the oven to 350 degrees F.

Step 2:

Peel the bananas and put them in a large bowl. Using a fork, mash the bananas. Add in the 4 tablespoons of vegetable oil, egg, 1 teaspoon of vanilla extract, and 1/2 cup of sugar. Stir all of the ingredients until combined.

Step 3:

Put the all-purpose flour, baking powder, baking soda, salt, and cinnamon into the bowl. Stir until just combined. Make sure to not over-mix the mixture.

Step 4:

Grease a springform pan and pour the banana bread batter. Place in the oven and bake for 30-40 minutes or until the top is set.

Step 5:

In a large bowl, add the sugar, softened cream cheese, and vanilla. Whisk until all ingredients are combined.

Step 6:

Microwave the milk for 2 minutes until hot then add the gelatin powder. Quickly stir for 5 minutes until gelatin is dissolved.

Step 7:

Pour the gelatin mixture over the cream cheese. Whisk until smooth then pour the cheesecake mixture over the baked banana bread. Place in the fridge for 3 hours or overnight. Drizzle with caramel before serving. Enjoy!
