Ingredients:

  • 6 red potatoes, diced
  • 2 tbsp olive oil
  • 1 tbsp dried rosemary
  • 1 tsp garlic powder
  • 1 tbsp oil
  • 4 boneless, skinless chicken breasts
  • 1/2 cup chicken broth
  • 3 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 garlic clove, minced
  • 1 fresh rosemary sprig
  • salt and pepper, to taste

Directions:

Step 1

Preheat your oven to 400 degrees F and line your baking tray with parchment paper. Add your diced red potatoes to a large bowl followed by 2 tbsp olive oil, 1 tbsp dried rosemary, 1 tsp garlic powder, and salt and pepper to taste. Toss to combine. Place them in a lined baking tray and bake in a 400 degrees oven for 30 to 35 minutes.

Step 2

While the potatoes are cooking away, go ahead and start preparing the chicken. Add 1 tbsp oil to a pan over medium-high heat. While the oil is heating, season your chicken with some salt and pepper to taste, then place them in the pan and sear for five to seven minutes. Season the remaining side of the chicken while it’s searing. After seven minutes, flip the chicken and continue cooking until golden brown. Remove them from the pan and set them aside.

Step 3

Reduce the heat to medium. Add 1/2 cup chicken broth, 3 tbsp balsamic vinegar, 1 tbsp honey, 1 clove of minced garlic, and a fresh sprig of rosemary. As soon as the mixture starts to simmer away, add the chicken back into the pan, then reduce the heat to medium-low. Continue cooking the chicken, flipping them regularly, for about eight to ten minutes.
