Ingredients:

  • 3/4 cup sugar
  • 1 tbsp lemon zest
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup milk
  • 1/4 cup lemon juice
  • 1/3 cup plain yogurt
  • 1 tsp vanilla
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cubed cream cheese

Streusel Topping:

  • 2/3 cup all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup melted butter

Directions:

Step 1

Preheat your oven to 420 degrees F. Next, in a large mixing bowl, rub 3/4 cup sugar and 1 tbsp lemon zest together to release oil, then add the eggs and beat until fluffy. After this, add 1/2 cup melted butter and mix well until incorporated. Then, add 1/4 cup milk, 1/3 cup plain yogurt, and 1 tsp vanilla. Continue mixing until combined. Once done, sift in 2 cups of all-purpose flour, 2 tsp baking powder, and 1/2 tsp salt. Fold them together until just combined. Set it aside.

Step 2

In another bowl, combine 2/3 cup all-purpose flour, 1/4 cup sugar, and 1/2 cup melted butter. Mix them together until crumbly. Now, add a scoop of the batter into a six-cup muffin pan lined with a baking sheet. After this, place a cube of cream cheese on each muffin (optional). Place the rest of the batter on top to cover the cream cheese. Finish by sprinkling the streusel topping. Place it in the preheated oven for five minutes, then reduce heat to 350 degrees F and bake for another 18 to 22 minutes. After baking, let them cool down before serving.
