I love muffins, and this bakery-style muffin recipe from Hot Chocolate Hits on Youtube is my absolute favorite! It’s super easy to put together, and you can actually change the blueberries into anything you want – chocolate chips, raspberries, etc. This recipe is a staple in our house, and we usually have them in the mornings, but they’re perfect any time of the day. Ingredients:

For the muffins:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp lemon zest, optional
  • 1/2 tsp ground cardamom, optional
  • 1/3 cup vegetable oil
  • 1/3 cup buttermilk (or any milk)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup blueberries

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1/2 cup chopped pecans, optional
  • 1 1/2 tsp ground cinnamon

Directions:

Step 1

Preheat your oven to 375 degrees F and line your cupcake tray with paper liners. Next, in a large mixing bowl, combine 1 1/2 cups of all-purpose flour, 3/4 cup sugar, 2 tsp baking powder, 1/2 tsp salt, 2 tsp lemon zest, and 1/2 tsp ground cardamom. Whisk together thoroughly, then add one large egg, 1/3 cup buttermilk, 1/3 cup vegetable oil, and 1 tsp vanilla extract. Continue whisking until well combined, then gently fold in 1 cup of blueberries.

Step 2

Next, in another bowl, add 1/2 cup all-purpose flour, 1/3 cup sugar, 1/2 cup chopped pecans, 1 1/2 tsp ground cinnamon, and 1/4 cup softened butter. Mix together well. Now, it’s time to assemble the muffins. Fill each cupcake liner around 2/3 of the way full with the batter. Then, divide the streusel topping between the muffins. Place the muffins in the preheated oven at 375 degrees F and bake them for 20 to 25 minutes or until they are golden brown. After baking, let them cool slightly, then serve and enjoy!
