Ingredients:

  • 1 lb penne pasta
  • 4 cups of butternut squash, cubed
  • 1 medium onion, diced
  • 3/4 cup parmigiano reggiano, grated
  • 1/2 lb mozzarella cheese, 2/3 cubed, 1/3 shredded
  • 2 oz tomato paste
  • 1/4 cup sage, chopped
  • 2 cups low-sodium chicken broth
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper

Directions:

Step 1

Start by peeling and chopping your butternut squash into cubes uniformly. Next, dice 1 medium onion, and grate 3/4 cup of parmigiano and 1/3 cup of mozzarella cheese. Set them aside. Now, add 2 tbsp olive oil and 2 tbsp of butter in a pan over medium-low heat. Next, add the diced onions. Saute for a few minutes, then add the chopped butternut squash and chopped sage. Season with 1 tsp kosher salt and 1/2 tsp ground black pepper. Turn on the heat to medium and add 2 cups of chicken stock. Let it simmer for 20 to 30 minutes or until the butternut squash softens. In the meantime, cook your pasta according to its package directions.

Step 2

At the 10-minute mark of cooking the butternut squash, stir in 2 oz tomato paste. After cooking, transfer half of the butternut squash to a large bowl and add about 1/4 cup of pasta water. Mix well, then add the cooked penne pasta. Toss well, cooling it a bit, before adding the cheese. Next, grease the casserole dish with some olive oil, then transfer 1/4 of the remaining butternut squash sauce. After this, add all the cheese (except the grated mozzarella) to the pasta mixture, and gently mix everything. Once done, transfer it to the casserole dish, then top it with the remaining butternut squash sauce and the grated mozzarella cheese. Cover the casserole with parchment paper, then foil on top, wrapping it around. Bake at 375 degrees F oven for 30 minutes. After 30 minutes, remove the cover and bake for 10 more minutes.
