Macaroni and cheese are one of the staples in southern meals, and it’s honestly one of my favorite foods ever. I love cheesy, creamy mac and cheese so this recipe by  Marsha on YouTube shows how easy it is to make the cheese sauce to pour over the macaroni and bake in the oven. Simple mac and cheese recipes are some of my favorites. I think it’s best to use a variety of cheese for the ultimate cheesy goodness. Everyone makes their macaroni and cheese different, but with similar ingredients and concepts. Baked mac and cheese make everything cheesier in my opinion.

Ingredients:

  • (1) 16 oz box of elbow macaroni 
  • Sharp Cheddar Cheese
  • 1 brick of Velveeta Cheese (16oz is in the video)
  • (2) Cans of Evaporated Milk 
  • Grounded Annatto (Do Not Use SAZON as a substitute)
  • Monterey Jack Cheese (For the top)
  • Butter
  • Salt

Directions:

First, preheat the oven to 375F. Then, boil the macaroni, drain, and set aside. Make the cheese sauce by melting butter in a saucepan, and add flour and whisk it. Whisk until doughy crumb consistency. Pour in the evaporated milk, and continue to whisk until smooth. Continue to watch Marsha tutorial on YouTube for further instructions and details.

Next, once the cheese sauce is finished, pour it over the macaroni in a baking dish. Top with the remainder of sharp cheese and Monterey Jack cheese. Bake and cover with aluminum foil for 10 minutes. Take off the foil and bake for another 20-30 minutes.

This is a great mac and cheese recipe whether you want to have it as a side dish for the holidays or to go along with one of your meals. I know in the south it’s a staple to have mac and cheese for Thanksgiving, and it’s not common for those in the north. It surprises me because it’s been a staple of mine growing up.
