Ingredients

  • grated zest and juice of 1 lemon (choose organic)
  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of water
  • 1 teaspoon of dried Greek oregano
  • 6 medium baking or Yukon gold potatoes
  • sea salt and freshly cracked black pepper
  • fresh chopped parsley and marjoram for garnish (optional)

Note: Make sure to wash your lemon thoroughly before testing

Instructions

Step 1:

Start by peeling the potatoes, then soaking them in water. This will prevent them from browning and it also wash away the starch. Cut them into wedges, but if it’s small, just cut it in half. Place them in a roasting pan.

Step 2:

Drizzle 1/4 cup of olive oil over the potatoes. Next, pour the lemon juice. If you don’t want it to be too lemony, you can lessen the amount of the juice. After that, add the lemon zest.

Step 3:

Sprinkle dried oregano over your potatoes, then season with sea salt and cracked black pepper. Stir everything together until everything is well coated.

Step 4:

Pour 1/4 cup of water into the roasting pan. This will steam the potatoes until they are fully cooked and then make them crispy as the water evaporates. If you want your potatoes to be soft and tender, add more water.

Step 5:

Set your oven to 375 degrees and place the potatoes inside. Bake for 35 to 45 minutes uncovered until they are tender and golden brown. Make sure to turn them occasionally with a spatula to avoid them from sticking. If you want them soft, cover the pan to steam.

Step 6:

Once done baking, remove from the oven and let the potatoes stand for 5 minutes to let them absorb the rest of the olive oil. Sprinkle freshly chopped parsley if desired, then serve.
