Start by preheating your oven to 375F and greasing a baking dish with cooking spray.
Remove the core of the apples, then peel them. Remove the bad spots and slice them into pieces. Transfer to a large bowl.
In a small bowl, add 6 cups of cane sugar, 1/4 cup of light brown sugar, 1 tablespoon of cornstarch, 1 teaspoon of cinnamon, and 1/2 teaspoon of nutmeg. Mix to combine.
Add the sugar mixture to the same bowl as the apples, followed by 2 tablespoons of sour cream and 1 tablespoon of lemon juice. Mix everything until well combined.
Transfer the apple mixture to the prepared baking dish. Thinly slice the butter and add on top of the apples.
Place in the preheated oven and bake for about 30 to 45 minutes at 375F or until the apples are tender and soft, and the sauce is bubbly. Make sure to stir it halfway through baking.
Serve the baked apples with a dollop of whipped topping or a scoop of vanilla ice cream.
