Ingredients:

  • 1 tbsp extra-virgin olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup kidney beans, drained
  • 1 tbsp cumin
  • 1 tbsp paprika
  • Kosher salt
  • Freshly ground black pepper
  • 1 (15 ounces) can fire-roasted tomatoes
  • 1 (8 ounces) can tomato sauce
  • 1 tube refrigerated biscuit dough
  • ¼ cup unsalted butter, melted
  • ½ tsp garlic powder
  • 1 tsp parsley, chopped

Directions:

Step 1

Place a medium ovenproof skillet pan on a stove over medium heat, then add some olive oil and let it heat up before adding in the onion, stir and cook for about 5 minutes until tender and translucent. Stir in the garlic and cook for another 1 minute until it becomes fragrant. Add in the ground beef and break it up using a wooden spoon. Cook it for about 5 minutes or until the meat is no longer pink. Drain off the excess fat. Add in the kidney beans, cumin, and paprika, then season with salt and pepper. Add in the fire-roasted tomatoes and tomato sauce as well, then let it simmer over medium heat for about 5 to 10 minutes until the flavors have incorporated.

Step 2

Grab your biscuit tube and cut each round dough in half, roll each half into a ball, then set them aside. In a small mixing bowl, combine the butter, garlic powder, and parsley, whisk them together until well combined. Then, dip and coat each biscuit dough ball into this mixture before placing them on top of the chili skillet. Pop the skillet in a preheated 375 degrees oven and bake them until the biscuits are golden brown and cooked through or for about 30 minutes. Let it cool slightly for about 10 minutes before serving.
